Fried Chicken Question

Fried chicken sounds good right about now. I just had this frozen chicken breast thing that's soooo good.

Unfortunately, my wife fries chicken in a large frying pan. We don't even own a deep fryer.

My wife's fried chicken is to kill for, though. ;)

365F for 15-18 minutes should do it if its totally submereged in the oil. I'd recomend that if you have an instant thermometer, you can take out a piece and check how close you're getting to 180F (recomended internal temperature). If you're a few degrees shy of 180F, that should be fine- there will be some carry-over cooking when you remove it from the oil to drain. Just don't let the chicken sit in the oil too long- it will lose alot of moisture and start absorbing the oil.

Also, to make really good fried chicken, before breading (I just use flour with some salt and cayenne pepper), soak it in some buttermilk- it will give it a nice flavor and the acid will help tenderize the meat (but don't soak it for more than a day, otherwise the meat may become mushy).

5-8 maybe, i hope that was a typo, shouldnt take more than 6 or 7 really

if its frozen it wont even take 15 minutes

my bad- I fogot to halve the times (I use a dutch oven, and do one side at a time). So, 7-8 minutes should be good- but I still strongly recomend using an instant thermometer to check the internal temperature as that's the only way to know for sure when the chicken done (then you'll know how long it takes on your machine).

If you open fry it just add a few more minutes. Damn...I really do fry too much chicken. But it's because the 8 piece fried chicken is on sale this week so I'm frying for 3 straight hours. God I hate my job :/
