freebsd is just a unix OS/kernel and does not dictate what you see on the screen, that is taken care of by Xfree86, which is also used in linux and other stuff. and in X, you can use different window managers, like window maker, enlightenment, or blackbox, to name a few, also you can use different desktop environments which consist of your taskbar thing, and your desktop icons and so forth. examples are gnome, kde, and ximian gnome.
so if you see a linux screenshot, it could be bsd and you would never know. the difference is "under the hood" so to speak.
bsd/linux are the 'engine', X is the body.
