Throw out iTunes, and install foobar2000. Install Rockbox on iPod, and then play flac, ogg, and other decent codecs. If you insist on being difficult, and want to continue putting up with Apple's crap, try dbpoweramp.

iTunes sucks on all OS's for playing music. Its for charging your credit card, not actually playing music.

I believe foobar2000 will batch convert your files to AAC if you really want though. It will also help you manage your library and update/add tags from a number of different services. It will do all of this without locking up or crashing, unlike iTunes.

The paid version is every penny worth it, although I do admit that it is not good at encoding to AAC, at least I did not manage with it.

If Apple could, they would make money out of dead body as well. I used to admire Jobs and I love Mac OS but as I read his autobiography, I have grown resentment for him.

The tablets that you use, that Mr Jobs designed are made to control you. You can't change the software. It's hard even to do ordinary programming. It doesn't really matter, they're just tablets. We just use them. We're just consuming the glory of what they give us, but they are consuming you too.

I'd suggest to "convert" your player - get rid of iPod and get some better player, you can get an entry level audiophile HiFiMan 601 for $200 plus headphones/earphones, I got HiFiMan RE-262 for $120 which sounds incredibly.

You won't need no itunes or other software, just transfer files/folders to SD card and listen to music.

If your finances would allow, get better player - better HiFiMan or Colourfly or Astell & Kern and better heardphones/earphones.

As per OP, I'd suggest to look Hydrogen Audio site.
