I use a forwarding service to forward to a hotmail account. Is there any way when I compose a message, I can go through that service, so it shows they are being e-mailed from me@myforwardaddress.com instead of my@hotmail.com address. The hotmail is so damn unprofessional and now that i'm using that instead of outlook it annoys the hell out of me.

No, that would require your making Hotmail use the other service's SMTP server. Hotmail will go get other email from other accounts (using the other account's pop3 server), but won't let you send from it (using the SMTP server). Hotmail does not currently allow you to send via other accounts. That's what the other account is for. ;)
