I'm looking to setup a HTPC and was wondering if video cards have a resolution setting of 1920x1080, the resolution of 1080p monitors?

 
My 8800GTX running on Forceware v97.92 supports that resolution... all newer video cards should be capable of supporting that resolution.. wether your will is more of a driver issue then anything else.
