This should be really interesting. New york griller vs. down home BBQ.

the show is throwdown with bobby flay for anyone interested.

I'll put 10 bucks that the bbq'er doesn't reveal his rub. ;)

I have some on the grill now.

And, it is just sauce and rips, none of that seasoning panzy women bs. :p

Turn in your BBQ apron, you are grilling. Ribs go on a smoker, max temp 240 degrees, minimum time 4 hours.

You "grill" hamburgers and weiners, weiner

That show is hot. I liked the Chowder episode. Will try to catch the late west coast rerun of this episode tonight.

oh well. If they show how to make good ribs on the grill then more power to them. Should be good for folks that don't want to take the time/hastle.

Mine, too. Low and slow, and I'll amend my earlier comment now to "low and slow, preferably smoked" is BBQ.
And most often, it's pork....until you get to Texas.

Anything else, is not BBQ.

LOL!

I just got back from texas. I wanted to get a taste of local bbq. You know, the local hole in the wall that probably has the best in town (san antonio)

It was all brisquette and chicken. It was good.

But I was like "WTF!!! Where's the piggy?"

he's correct, smoking is indirect heat under 200 degrees, bbq is cooking with indirect heat between 200-250 or so, and bbq is over direct heat above 250 degrees.

dude, there are many different methods of smoking. But they are all generally under 250 except for foul, even as low as cold smoking.

but we can probably all agree that the defintion of BBQ is open to regional aspects.

But you're right, it depends on where you are from. Indirect smoking at 200-225 is BBQ to me. I've never heard of a BBQ ham, but I can smoke you one that make your eyes roll in the back of your head.
