So I'm creating this 1 page document... 46k... Couple days later, I come back and change a few words, edied some sentences, changed the formating... Bam! Over 100K... Couple days after that, go back in and change a few more words... 206K...

Now its at 228K, all basically the same doc as it was at 46k...

What gives, and how can I shrink it again?
 
It would appear that you have "Fast Saves" enabled, and are doing a lot of reformatting.

To get it back to the original size, you'll need to disable "Fast Saves", then cut and paste the document to Notepad. You'll then need to cut the text from Notepad and paste it into a new, blank Word document.

How about rtf instead of notepad? I hate to reformat too much...
 
Try a "save as..." first and see if the new file is any smaller. If not, then cut and paste into a new blank document as "unformatted text." This option is under Edit --> Paste Special
