Food Dilemma

So I just made this, & it came out yummy. I set enough aside for two loafs, but the recipe didn't pan out as described, & I ended up with two batches with the first mix.

I now have more then 2lbs of fruit sitting in a cup or so of yummy rum(rehydrating) in my fridge. I have more then enough fruitcake. It's too early to make fruitcakes for everyone at Christmas.

Does anyone have a recipe that can put the rum saturated fruit to good use?

Do not ask me for a fruitake or I will put one through your windshield. 🙂
 
you can make parfait type things.

get tall glasses and layer the fruit with white sponge cake, fruit, and either pudding or whipped cream.

That would be a good idea on Christmas, but as is, I need something I can stick back in the fridge when the night is over. 🙂

I guess I might just overstock on fruitcake & baste them in brandy till I fall over. Maybe I'll take a couple windows out on the way down. 🙂
