DCS: Black Shark is another option. The Warthog version looks great too. There are a handful of fun games to play on PC with the right joystick. BF3 can be a bunch of fun with a good setup, it's more arcadey - but it's also more intense because the enemies are real people.

DCS games are amazing, but they are beyond complex. Every button/switch/system is modeled. It is called a "study" sim for a reason. You will spend weeks/months studying the 600+ page manuals that come with the games.

Also take a look at Rise of Flight (http://riseofflight.com/en). It is WWI based, and has a free full feature demo (limited to a couple of planes) that you can play offline or online. If you like the game, you can just purchase the planes/mods/maps/etc. you want to use.

I personally prefer CH products controls. They last forever, can be programmed to do just about anything, and cost significantly less than a TM Warthog (which doesn't come with rudder pedals). You can get a CH Fighterstick, Pro Throttle, and Pro Pedals for @$320.
