I'm trying to make some changes in my life, and after taking a look at my diet, figure that I need to get more fish into my diet. In the past I've liked fish only one way, deep fried. Deep fried fish and shrimp are the only way I can enjoy a good fish dinner these days. I tried to eat grilled shrimp and I couldn't get past 3 of them. My mother in law does make a good fish dinner, but its heavily laced with lemon and butter. Also, my wife does not eat any fish.

So what sort of recipes would you recommend?

I usually just bake a couple fillets in aluminum foil with some lemon, dill, salt, pepper and a bit of water for steam. sometimes I add some butter.

seal them good and bake at 400 for 30 mins.

Then you will have very tender, juicy fish with less calories than frying.

Try some shark. It's consistency is almost beeflike. A little olive oil and some oregano or lemon pepper and onto the grill. Swordfish is almost the same, but around here swordfish is $15-20/lb but shark (blacktip) is $5/lb.

I never ate fish growing up, but I got some swordfish on a ship once and that turned me into a fish eater. I wholeheartedly endorse swordfish. It's delicious, and even if you think you don't like fish, swordfish is almost guaranteed enjoyment.

Grilling salmon is pretty fantastic. Put a little oil on the grill, get it nice and hot, and throw the salmon on there without foil, skin side down. Close the grill, wait a few minutes (~5-7), and check the fish. The top should look cooked. Then pry open the thickest part and if it's done, take it off the grill, skin and all. My favourite part is the skin :)

Also, sablefish is really good pan seared.

Blackened Tilapia

Heat up a cast iron pan on medium high heat.
Combine:
Smoked Paprika
Garlic Powder
Onion Powder
Black Pepper
Salt
Mix with enough olive oil to the rub to moisten well.

Coat on Tilapia filets.

Fry up in pan until cooked, should get a nice dark red (and some parts black) sear to it. Probably no more than 2 min per side. Fish doesnt take long at all.

Let drain a minute on some paper towel or a wire wrack to let excess oil off.

Delicious.

Also Shrimp Tacos:
Pan fry up some small shrimp in a pan with a little taco seasoning or just salt and pepper.
Mix some light sour cream with chopped up canned chipotles.
Shred some red cabbage

All in flour tortillas...also delicious.

The blackened fish also works well as a fish taco.
