In light of the reality here in the USA being "Whatever The Flakey White Meat Inside The Batter Happens To Be", I don't think a lot of us could say for sure.

This. It is possible to find a restaurant that specifies the kind of fish, but not all that common.

What does catfish taste like? Is it white meat? Does it have a distinctive flavour or is it like most other white meat fish?

Catfish is a dense fish. Tastes fairly mild and is quite filling. I usually bake mine in a tinfoil boat with herbs and some lemon. I have never had it deep fried.

Halibut for me. 2 pieces of Halibut + chips.

That's what I get from our local Archies Fish N Chips.

I love me some good steak fries, but they have to be soft.

Because those large fries are often served with steaks. You call them chips in NZ I'm assuming?

well, steak fries can mean that, and it can also mean potato wedges.

so...

to me (an american) the 2 posted images are both fries. the things you get from mcdonalds/burger king might be referred to as "fast food fries", or "shoestring fries/potatoes".

to put it simply, the word "fries" doesn't imply a size of said potato chunk, aside from that it's significantly longer than it is wide.

as far as op goes, generally i get cod fillets. it depends on where i eat. i don't particularly care, they all taste good.

If it's called "fish and chips" then I think it's usually cod. But a popular one in Minnesota is fried walleye. So yummy. Either served the same way as fish and chips or on a sandwich.

Halibut unless I have no choice then Cod. Don't forget tons of malt vinegar. I use a crap ton of that stuff on the fries and fish.

fried catfish with fries is not fish and chips. but it is delicious. eat with hot sauce, tartar sauce, and cocktail sauce.

fish and chips has to be ocean whitefish. only with fish and chips are the fries called chips in the US, and that's really only because that's the name of the dish.
