I don't get it, why would one use ESR when it's outdated?

Because Mozilla keeps adding the stupid to these new releases. By using the ESR, you limit the amount of times you have to Google to undo the stupid changes Mozilla comes up with.

For corporate support, and others who don't want to update as often. You get security fixes, but the rest remains stable.
