I use my iPhone 4S as a camera more than anything. I always like to see what other people are using and share what I use, since there's so many cool apps out there. Here's a small sample of what I've shot on my 4S:

I sometimes use a really cool lens, the Olloclip ($70), which has a wide-angle, fisheye, and macro lens:

Worth every penny. Phenomenal lens system if you do a lot of iPhone photography. Also great for video - the fisheye turns into an ultrawide with the video crop.
For hooking the iPhone up to a tripod mount, I use the Glif ($20 for the base, $30 with a top clip). It is by far the best tripod mount I have used. Avoid the DiffCase like the plague; it's junk. I've also had bad luck with several phone pressure clips, one actually scratched the glass on my phone.

I use a Gorillapod for a small, flexible tripod. You can wrap it around a fence or branch or just angle it however you want. Easier than carry than a big tripod, too. Beware of knockoffs, the ones I've tried work like crap. Amazon usually has good deals on Gorillapods; otherwise there's usually coupons floating around. I have pretty much every Gorillapod in the product line (I use them for lights, mics, cameras, etc.) and they are all pretty nice:

I use a sliding track (Glidetrack) for smooth motion shots in video. They have an iPhone version available now called the Mobislyder ($130):

I shot this video on my Glidetrack with an Olloclip, attached with a Glif tripod mount:

As far as apps go, this is what I like to use...
Photo:
Camera+: My default photo app. Adds grid lines when you take a picture, lots of nice filters and cropping tools. Lets you set focus and exposure (Protip: spread two fingers on the camera screen and you'll get two red boxes - one for focus, one for exposure).
Straightener: Lets you straighten photos.
After Focus: Selective focus through software. Select what you want in focus, select the background, then tweak from there. Sort of a dSLR-ish effect.
PS Express: I use this primarily for the noise-reduction tool. The PerfectlyClr app is a close contender, but I like this better. Gives it an overly smooth look, but works great.
Simply B&W: My favorite black & white app. Does brightness & contrast, vignettes, and pretty nice film grain. Aside from doing great filmy b&w photos, I've saved a lot of so-so images by turning them into good monochrome pics.
CrossProcess: My favorite app for a bit of an old-school look. Sort of like Instagram, but more realistic imo.
Pro HDR: Not so much the cheesy HDR as much as well-exposed imaging. Really nice for cars & landscapes.
SlowShutter: Light trails etc.
PicFrame: Lets you do fun picture frames. Great with friends or kids, or multiple angles of cars or motorcycles.
Pano: Widescreen panoramas with auto-stitching and a nice ghosting feature for orienting each shot after the last.
SnapSeed: Probably the best filter/Photoshop-ish app on the iPhone. I use Camera+ 90% of the time, but if I'm in the mood to do a lot of tweaking to a photo, I'll use this instead.
Retouch: Lets you remove stuff from photos like Photoshop does. Nice for random people photobombing your pictures, bird poop on your car, etc.
Exif Remover: Deletes the metadata from your photos (i.e GPS location of your house, useful for when you upload photos online)
LensFlare: Really realistic & awesome-looking lens flares. You can go nuts and do Star Trek-esqe flares, or simple Xenon headlight flares. If you like messing with lighting effects, also check out LensLight from the sample company.
Filterstorm: Probably the best Photoshop app for iPhone. Has layers, curves, shadows/highlights, sharpening, IPTC editing, etc.
I have about a zillion more apps, but that's what I use on a regular basis. Mostly Camera+ and Straightener, really. Throw in Snapseed for more complex filters and Filterstorm for serious editing and you've got a pretty nice edit-anywhere camera.
Video:
Filmic Pro: Lets you control FPS, lock exposure & focus, etc.
SloPro: Slow motion (and sped-up motion) up to 1,000fps via software rendering (60FPS native)
iMovie: I'm not a big fan of video editing on the iPhone, but for quick stuff I still like iMovie as my favorite editor.
Movie Looks: Simple color grading app. You can make clips look like the Transformers, Matrix, black & white, etc.
VideoFX Live: Make movies with weird effects like pencil or warp. You can create your own mixed effects, too. Fun with kids.
Action Movie: Ridiculously fun pre-made effects. 2-packs are a dollar, there's 4 or 5 available now (plus some free ones). I spend way too much time at lunch making funny videos with my co-workers.
Cinemagram: Basically a gif maker, for doing stuff where only one parts of the picture is moving. Like you in the mirror moving, but at the sink not moving. Fun to play with.
