Diablo 1 and 2 were action games, not RPGs. There wasn't any actual role playing in them.

In regards to the original question, it'd be Planescape Torment, with Baldur's Gate 2 in close second, and Neverwinter Nights in a lose third because of the user mods.

Why wouldn't Diablo be an RPG? Just because it isn't filled with thousands of pages of useless history that few people care about? It still had player building, multiple classes, dungeons to explore, and people to talk to.
