I like the one in Metallica's Tuesday's Gone (I think that's a cover of another song). There are probably better ones out there, though.
 
personal favorites are

billy joel - piano man (not a solo but great sound and intro)
weezer - my name is jonas (not exactly a solo or anything technically hard but I like the way its used_)
