Favorite cut of steak?

Whats your favorite cut of steak and why? I had a delicious filet tonight but heard a guy behind me complaining his ribeye was fatty......

filet mignon, Bern's Steak House...

If I were to eat beef again. I gave it up again last week... I for years as a vegetarian, then went back to meat, and now I am going back to being a veg head again.

:)

I've been to bern's steak house in tampa, damn it was good. I'll go with filet mignon, and then prime rib.

fillet is the most tender but doesnt have the most flavor.
ribeye has a lot of flavor but yes does have some fat, but that is what adds flavor, its hard to judge if a ribeye is going to be fatty until you cut it into steaks. Most of the places i worked were cut to order so if you were a good paying customer or a friend, or a tipper, You got a better cut.
I like porterhouse myself, but its just a variation of the T-bone
I was a meat cutter, and during that time I also worked as a grill cook in various resturants for about 8. Its always ben a second job for me, since my "big time high pay computer job" doesnt pay enough.

Filet Mignon(sp?)

Small cut of the most tender sweet beef, expensive, but I can get up and walk out of the restaurant, not go home and want to fall asleep.

Next is New YOrk, not as sweet, and definitly not a small cut, for when I want to go home and snooze ;)

New York Strip or a Sirloin. Dry aged. Medium at most. Some Montreal Steak Spice. Yummmm.

Smith and Wolenski's or Mortons is great steak.

most tender piece of steak i have ever eaten in my life...and i have eaten at quite a few 5-star steak houses...

on my 17th birthday, I had a 21oz T-Bone that cost my mom a fortune. I had the pleasure of BBQing it myself, perfectly. I've never had such a perfect steak, ever.
