I know a guy who always uses M mode. He thinks AV/TV modes for clueness noobs and is proud of using M mode only.
The problem is that he centers his exposure following the camera's metering system. I always wanted to tell him he's far better off using AV mode and that he's just wasting time/effort using M mode. But, I can't for he has too much pride in using M mode.
 
There's a time and place for AV/TV/M modes. I generally only shoot M if the light is going to be constant. So... (for sports) sunny, cloudless day; inside an areana, etc...


If there are clouds or if someone will be moving in and out of shadows then it's AV.

Depth of Field calculator. Make sure you know what you're shooting. Even 10 feet away, your +/- for in and out of focus could be like 6 inches at certain apertures. For a group, f/2.8 can be a problem or any wide open aperture. Make sure you know this.

Second of all, the 7D is a beast to deal with for autofocus. A lot of people think they can jump right into it. I suggest you do a detail rundown for each AF feature it has and if you're using 19pt AF, you should learn how the camera will always AF on the closest subject. This is a problem if you use all the points or even zone AF. Most pros will stick to single point and quickly adjust. You'd be surprised with a little bit of practice, I have no problem AFing with single point even when I need to be quick with my shots.

On the other hand I suck at selecting AF points on my Rebel, so I stick to center 90% of the time, and maybe auto at other times.... lol.
