Fans....lower voltage?

I have been using a Scythe S-Flex 120mm fan running at 12volts 800rpm to keep my case cool. Seems to work fine. Now I need another to keep my HD's cool.

I see a lot of recommendations for the S-Flex fan that runs at 1200 rpm. Most say they run the fan at 5 or 7 volts and it is extremely quite.

Whats the advantage of lowering the voltage and rpm's instead of just running a fan that is rated for a lower rpm at 12 volts?

You can go higher if needed.
