F-250 1998 stalling on the move

My uncle has a Ford F-250 pickup from 1998 that stalls after about 5 minutes of running. The check oil light is on but the mechanic says that the computer is not reporting any error. The mechanic wants to tear up the motor but obviously, it is going to be expensive and the fact that the mechanic does not know what the problem is; is not encouraging.

I know that changing the mechanic is a good idea but I would like to get some feedback about the possible problem.

The old Eclipse I had used to stall out occasionally when coming to a stop. Replaced the Mass Airflow Sensor and it was fine.
