How do they price fares?

They seems to go up and down everyday and sometimes every 4 hours. besides the last minute, when is the worst time to book a jet Blue flight? Also, when they book flights to the max, do they start a new flight to book? I bought a ticket earlier today and when I came back to check on the prices, none of the options i wanted earlier were there. Instead...they had new times that changed the arrival to a 1/2 hour earlier.
 
All airlines change their prices on the fly as demand for a given flight changes.

If you see a good deal, you shouldn't wait too long, or else you will get screwed, haha.
 
everytime i checked, they have been way more expensive than delta or AA recently. go figure.
