I've never done it myself but I imagine it could be a good time if you have a decent group of people. I guess it depends how strict they are or if it's pretty much a free for all within reasonable means, ex: do they only allow to watch a movie or is it treated more like renting a hall and you can do other activities too. Are you allowed to bring food from other sources, can you play ANY movie/show/game or does it need to be preapproved (Ex: copyright stuff) etc Stuff like that would be worth asking first.

If there is a way to hookup a gaming console that would be pretty epic actually.

At the previous company I worked at, they have an arrangement with the movie theater across the street to hold our townhall meetings. Don't know what the going rate would be, but our townhall meetings would last anywhere between 1hr to 2hrs and we have them at least every quarter. Once in a while, the company would also host movie days for all employees. So, you definitely could do other things besides showing a movie but no food from outside though. This arrangement was with Edward's (now Regal Cinemas).

AMC started posting theater rentals on their website during the pandemic. It always seems pretty reasonable to me. The worse thing is their classic movie selection aren't really the ones I feel the need to watch on a big screen. (Jurassic Park, T2, etc).

Many years ago my ex and I rented one of those "small" theaters that were popular for awhile locally for my older daughter's birthday party. (can't recall the actual movie)

She and her friends loved it (all that really matters!) but as I recall it was a PITA for us and relatively expensive too.
