Is there any way to stop anonymous from sending spammail from our server?

Where do I find that setting?

Under the site configuration menu, go into connectors (ms mail/internet mail/etc) and select the internet mail service. THe setting is in that tab. After making the changes, stop and restart the internet mail service service under control panel -> services. That should do it.
