Exchange 5.5 Consolidation help request

I currently have 5 microsoft exchange 5.5 servers working together on one domain, and I want to consolidate them down to 3 servers. Besides moving mailboxes, what else needs to be done before I delete the exchange server? Are there any gateway entries, or public folder replication settings I'm gonna have to change defore I delete the server? Can someone please link me to a good Microsoft resource along with perhaps an even better "non-microsoft" resource for this kind of stuff? I'm looking for a "best practices" type of whitepaper on it.
