Excellent Chicken Recipe

Tonight I cooked dinner for my girlfriend since it is her birthday. I had a thread going earlier asking for suggestions and quite a few good ones were made, but I found a different recipe I wanted to go with.

The Chicken was excellent.

Honey Mustard and Red Onion Barbecued Chicken
Recipe courtesy Rachael Ray


Recipe Summary
Prep Time: 5 minutes Cook Time: 20 minutes
Yield: 4 servings
2 tablespoons vegetable oil
1/2 red onion, chopped
1/4 cup apple cider vinegar
1/4 cup brown sugar, a couple of handfuls
1 cup chicken stock
1/2 cup prepared honey mustard (recommended: Honey Cup brand)
1/2 teaspoon allspice, eyeball it
1/2 teaspoon curry powder, eyeball it
4 pieces boneless, skinless chicken breast
4 boneless, skinless chicken thighs
Vegetable oil, for drizzling
Salt and freshly ground black pepper

Preheat grill pan or griddle over medium high heat.
Pour 2 tablespoons vegetable oil into a small saucepan over moderate heat. Add red onions and saute 3 to 5 minutes. Add vinegar and reduce by half, 1 to 2 minutes. Add brown sugar and cook 1 minute to incorporate. Whisk in broth and honey mustard, allspice and curry. Bring sauce to a bubble and reduce heat to lowest setting.

Coat chicken with a drizzle of oil and salt and pepper, to your taste. Place chicken on hot grill and cook 4 or 5 minutes, then turn. Baste chicken liberally with sauce and cook another 5 minutes. Turn once again and baste. Cook 2 or 3 minutes more to cook through and transfer chicken to a platter and serve.

Rachael Ray has one heck of a job. Travels the world on that show $40 a day, eating whatever she wants, then gets to cook whatever she wants on her other show. Amazing she isn't a blimp.

That sounds mighty good, indeed. :)

I can't wait to get a place of my own and start cooking myself...

Heres what I am making in a couple weekends for a group of 11 friends (a monthly thing).
I won't go into all the details of how to make it as I doubt anyone cares, but it's HELLA good!

Black and White Chicken:
1 Chicken breast cut in half, half covered in parmesan cheese the other half rolled in cajun seasoning.
You bake the parmesan half as normal in the oven.
Blacken the Cajun half in a cast iron skillet.
Serve in a bed of alfredo sauce with prosciuto (sp?) and a slice of lemon (for the blackened half).
Absolutely delicious. Goes great with veggies and a twice baked potato :)

Used to cook at a gourmet restraunt so I'm just chok full of this kind of crap :)

we (me and his mother) are teaching my daughter and her boyfriend and their respective younger brothers and the gal next door to cook this summer.. once a week, we're taking turns. not to cook everything in the world, but to cook what they want to know how to cook.. their favorites.. stuff that can be cooked without all the fancy equipment in the world, stuff that can be cooked in a shared on campus apartment kitchen.

I haven't been here all that long but the what to cook and how to cook threads pop up at least once or twice a week, I was wondering if we ought not have a continuing recipe thread..

Here's a low-effort one I like:

Two skinned, boneless chicken breasts
One zucchini or yellow squash, sliced
One green pepper, sliced into strips
One clove of garlic, minced
Dash of oregano
1/2 cup chicken broth
3 tablespoons lemon juice
1 tablespoon cooking wine
Black pepper to taste

Preheat oven to 350 degrees. Mix lemon juice, wine, and broth. Place chicken breasts in a casserole dish and top with other ingredients. Add broth/wine/juice. Cover casserole dish and bake for 20 minutes or until chicken is cooked through. Serve over rice or pasta.

It's a favorite of mine because of the "mix and walk away" preparation, but it's pretty tasty, too.

Ewwww, curry. After I ate at an Indian resteraunt I can't eat curry anymore.
