Excel formatting

I'm trying to get a tracking sheet together to track "assets". Each "asset" may belong to one or more (up to 6 or 8) "categories". I want my "categories" cell to expand as I type (word wrap) but I want each category to be on it's own line for better readability when printed.

How do I get category names, of varying length, onto separate lines? Hitting return moves me to the next cell down; hitting tab moves me to the next cell to the right.

I'm not opposed to each category having it's own cell/row, if I can somehow get additional rows to auto-insert as needed. I'm assuming this would be harder/impossible.

I use Excel about 5 times a year. Halp?
 
It really is as simple as I'd assumed, thanks.
