The current Nvidia HDMI solutions only support audio over HDMI via s/pdif passthrough cable. That means you will only get the standard DD 5.1/AC3 signal over HDMI and none of the higher formats like Dolby True HD, DTS HD MA, LPCM 8CH etc. If you have a good sound card and playback software with a receiver with 7.1 inputs, you can still do analog out and get the higher quality formats.
ATI parts beginning with the 3000-series (I think) support LPCM 8CH over HDMI. I have not tried this personally and I heard there were some problems with this early on, but ATI GPUs have their own audio codec, which is able to decode and pass LPCM 8CH over HDMI, along with video.
