I have 5 lbs beef for burgers and approx 2 chicken thighs for 10 people. Is the 5 lbs of ground beef enough for 10 people?

5lbs of ground beef/10 ppl = 8oz each. that will give them 2 burgers each.

I am taking it that you mean you have two thighs per person for ten ppl = 20 thighs?

What about frankfurters?

yes two thighs..no franks...people wont be that hungry
 
All depends how big you make the burgers. 2 per person is enough. 1/4 pounders are big enough if you flatten them, otherwise they'll look like golfballs.
