Cool stuff. What's the explanation, anybody know?

From a user comment.
"its the same way that we contract our muscles. sodium penetrates into the muscle and causes calcium to be released from the sarcoplasmic recticulum. the calcium binds to the actin and myosin, this causes muscle contraction. this can happen while the frog dead because there is still glucose in muscle tissue. the frog legs must be fresh and this effect will only last until the glucose is used up.
