hi
if i use an encrypted ftp transfer, will people who watch the packets be able to tell what i am transferring?

also,
what server software for windows is recommended? sftp, encrypted ftp or?
 
Hmm.. I guess that if encrypted info can be read, there is Not much point for encryption. 😉

What method to use? It depends on the System (I.e. if you already have some type of Encryption/Security settings), and personal prefernece.

I use sftp.

Any SSL enabled FTP server for Win32 will work. CuteFTP use to make one, forgot what its called now, and also SERV-U 6.x allows SSL enabled FTP for encrypted transfers.
 
Check out WinSSHD. It has some great SFTP functionality as well as secure command line, secure RDP etc, all tunnelled through SSH. It's pretty cheap at $40 for a personal license.
