where the hell do i get enchilada sauce in DC/northern VA?

Everything I can find is stupid 'old el paso' or some other tomato based sauce. If i wanted pizza sauce, i'd buy pizza sauce.

where can i find las palmas?

I mean, I feel like every red enchilada sauce recipe has tomato in it somewhere.

why not just make it yourself if you're particular? it's not terribly time-consuming.

Never bought it, but I'd be surprised if the better groceries didn't carry something suitable. If not, there's plenty of Latin American stores around. Say what you want about illegal immigration, but it's improved my food choices considerably.

Hmm... apparently only safeway carries las palmas. I live in crystal city, and the closest safeway is either in rosslyn, or almost to huntington. Guess it's something to pick up when i'm down that way. Thanks.

No, it's tomato sauce based with spices flour & oil. I made some a few weeks ago. Based off your OP if you don't want a tomato based sauce, you probably shouldn't be after Enchiladas sauce. I've never had the Old El Paso kind, but it's extremely hard to mess up and there's going to be next to no variation from brand to brand how it's made. I know it won't taste as good as fresh home made, it will be close to anything else store bought.

I'll check out the mercados on Mt. Vernon tomorrow. hopefully they might have the uncased chorizo i'm also looking for.

This just in, people live (and think) differently in different parts of the country. San Diego is about as far as you can get from your current environs in culture, thinking and, food. You're not in Kansas (California) anymore.

LOL I live in So Cal, have been to Mexico numerous times, have eaten Mexican food thousands of times and have dated Mexican females. Sorry, but you have no fucking clue what you're speaking about here. I have eaten Enchiladas hundreds of times in my life and every single sauce was a tomato base, period. I also make them once a month if not more often.

You don't even know where to buy the sauce in your area, you're probably not a good person to argue about this. You can't find the sauce, and I have 4 taquerias within washing distance where I can go get them. I'm not saying you didn't have a sauce that wasn't tomato base, but it sure as fuck wasn't Enchiladas sauce. In the 70's my mom lived in St Louis and told me everyone put Ketchup on Tacos. So apparently nowhere outside of Cali, Texas, NM & Arizona know shit about how to make Mexican food.

I will blow your mind, authentic sauce usuall doesn't even have chili peppers in it, it has some chili powder, but no actual chilis.

Sorry but, as a Chef currently working in the Southwest, I can tell you that enchilada sauce (at least good ones) are not tomato based.

Southwest, you mean that place where they make Tex Mex food which has a fucking pound of Sour Cream on everything? Tex Mex food is about as far from authentic Mexican as you can get.

OP's looking for ancho sauce or something similar, if the sauce has any texture to it, it wasn't made right. It should be medium thickness and smooth as cream.

Imagine that, items differ based on the region and their predominant customer base.

I've worked in southern California, Arizona, New Mexico and, Nevada. I don't believe I've ever run across a good enchilada sauce that had a tomato base. I too have traveled and eaten in many parts of Mexico. I have not experienced the tomato based enchilada sauce you speak of in my travels. The problem I have with folks who get hung up on "authentic " whatever is that it's all bs. Many styles were created primarily due to product availability and economics. In addition, everyone steals from everyone else and uses their own local ingredients which is just as "authentic " as the folks they stole it from.

I hate to be that guy that agrees with Quebert, but every plain "enchilada sauce" I've had was tomato based. This includes in Mexico. Now, you can get other sauces, like verde or a style of mole, but the default is tomato based.

Nova is filled with hispanics and latins and latin markets. I'm surprised you couldnt find one.

Come to Manassas, theres several grocery stores that have exactly what you need.
I hope you speak Spanish, last time I was in one of them I couldnt find anybody who understood English.

I lived in San Diego too, for the bulk of my life. Your 'appeal to experience' is not relevant, you have no greater experience than me.

No, 'authentic' enchilada sauce does not have tomatoes in it. It does have chiles, generally one of the kinds I listed already. here's a hint: authentic mexican food uses a lot of dried chiles.
