Email server testing/migration question

I am working towards an email server migration from GroupWise to Exchange 2k. (80'ish users)
(actually less of a migration and more of a -leave the old server and email behind and crank exchange 2k up clean and fresh while keeping the old server running and allowing for access to old email via the old server.)

My main question about this move is how to properly test the new email server while keeping the old one up and running. How would I enable a few users to send and recieve mail and ensure everything is ok, and then a few more, etc without either changing the MX record over to point to the new email server's IP or just changing the IP of the new server to what the IP of the old server was and opening the email floodgates?
There has got to be a way to have them both running and cut over a few at a time to test for a few days and then a few more, etc.
Any ideas?

Ya I have control of the MX records and DNS, however I don't know of the best way to edit them to allow for cutting over a few users to the new email server at a time, or if that is even possible to have both email servers running and sending/recieving email for some users each.
 
Actually, I am going from GroupWise to Exchange, however that gave me the idea of trying a similar tactic as explained on my GroupWise server to send the messages for certain accounts on to the Exchange Server.
