Egg GRADE AA, AAA ?

Beening the crap cook that i am, i was wondering what Egg Grade means, I see them on the carton AA AAA etc. What is better, what do they mean?

The higher grade eggs have firmer whites. Lower grade eggs are runny and the yolk isn't well protected.

Always buy the highest grade eggs and keep them cold.

How can they tell?

They spin the eggs infront of a light that allows the inspector to watch the yolk inside of the egg.
