Why do Jews have a taboo against it ?
I could venture a (humorous) guess but I really don't know. :p

the hoof has nothing to do with it. jewish laws say that an animal must have a split hoof, like a cow or lamb, the bigger reason is that a pig does not have 4 stomachs or chew its cud, both of which are required for an animal to be kosher.
another reason has to do with the habits of pigs. it was said that man should not eat an animal that lives in its own filth. pulp fiction did get that part right:)

A ban on pork was included in the old Jewish laws for the same reason as mandatory circumsicion: to increase the tribe's numbers. Whereas circumcision increases fertility (before they had fertility drugs, at least), avoiding pork was a measure to prevent disease. The Christians never adopted this law, because pork was always a very important part of the diet in European countries. Also "pork" in the Middle East was a different thing than "pork" in Europe. In Europe, pork refers to meat from pigs, which are relatively clean. Whereas, in the middle east pork would refer to hogs, that tend to eat garbage and such.

And the pig, though it has a split hoof completely divided, does not chew the cud; it is unclean for you. You must not eat their meat or touch their carcasses; they are unclean for you. (Leviticus 11:7~8)
