Eat Healthy Cooking for One Cheaply

I just got home from grocery shopping and I think one of the reasons I've been feeling lethargic lately is my diet. I need to improve it. The problem is I work full time, go to school full time, and attempt to have a social life. Of course because of this I consume wayyy too much fast food, and eat out too much (expensive).

What are your ideas for eating cheap healthy foods. I eat ramen, mama celestes, canned soup, rice, steaks, steakums. I need to eat better. Suggestions? Any ideas with canned tuna? Some veggies?

Help me ATOT.

Is that _all_ you eat? You have to eat fruit or vegetables man, or else you get scurvy and die.

I occasionally eat fruits and veggies... VERY OCCASIONALLY. When my grams was alive she cooked for me, and since she died I haven't been eating right. I wish I had a woman to cook good food for me. I realize that's no excuse but I need some ideas for dishes that don't take much time, cheap, healthy, and can be stored. As long as it tastes OK I dont really care.

Salads are easy to make and very healthy. Also, buy a wok and stir fry some veggies. Try to eat some fruit just about everyday.

Have a fruit only dinner. Just cut up a bunch of apples, watermelons, honeydews, pears etc and put them in a large container.

If you are a member of costco, they have a fruit bowl (about 3 pounds) for less than 10 dollars

how can something be very occasional? I got in an arguement with a friend over this.. id like to hear your thoughts... it is more frequent or less frequent then regular occassionally.

You know those bricks of frozen vegetables they sell? Not the ones in some sort of sauce, but the ones that are just cut up frozen veggies. Buy those. Lots of them. Olive oil in a pan w/ some fresh garlic, dump in the vegetables. Experiment with sauces and bases. Tomato paste is a good base. Maybe some light coconut milk and a little curry paste. That sort of thing. Vary it and eat it with some chicken or other lean meat on the Foreman, change those up with hot sauces, bbq sauces, marinades, etc.


Also, make extra. I cooked down some onions and garlic, added a couple chopped up tomatoes, seasoned (not heavily salted), and added a big can of black beans and cooked it on med/low heat for a couple hrs. It's good, will last for about a week in the fridge, and can be a side to anything.

Make the core of what you eat fresh ingredients, not processed foods. Condiments and such are ok, just don't go overboard. I'm an evening law student with a FT job, so I can totally relate.

I will not call myself a chef but I can manage to make food that only I will eat :p Everything that I cook has no flavor to it no matter how much soy sauce, salt, MSG I put in so I just put very little in now. I guess that's the healthy way of eating. :) You can grill chicken and stir-fry some vegetables in about 15-30 minutes tops.
