I can think of two good ones off the top of my head.
Fallout 3:
-In the Steel expansion pack, when you are running around the metro tunnels trying to get into the White House (I think) there was a long dead end tunnel that had no items of real value. Some nutjob set up a garden gnome behind a camera. In front of the camera were two teddy bears, wrapped up like hostages with a little sign in front of them saying "HELP ME!"
Fallout New Vegas:
-In one of the bungalows at Jacobstown, there is a table with one chair on each side, plenty of whiskey bottles on it and a couple of Sasparilla star caps, one deck of cards, and two hands laid out. One hand has a king of diamonds and garbage, the other hand has 5 kings of diamonds. Laid out on the floor on that side is a skeleton.
Also if you take the Wild Wasteland trait there are other easter eggs, but those are scripted to happen and many websites have already reported them.
