Easiest way to convert 1080p mkv to Iphone/PSP?

I use clonedvd to convert SD DVDs to watch movies on my iPhone and PSP. Is there a similar program to makes it easy to convert 1080p/720p mkvs?

Preferably one where I can zoom into the picture to remove any black bars. I always watch movies in their normal aspect ratio, but considering how tiny these screens are I'm willing to chop off the sides a bit to have the picture fill the screen.

Another plus would be encoding built in subtitles into the new file.

Thanks for the links, I have automkv installed so I'll give that a shot first.

I gave Handbrake a whirl and it looks good. Only problem is with cropping. It gives option to custom crop but it doesn't show a preview which makes it hard to use.
