Take spanish. It's the most similar to english.

actually german is. A lot of the words are the same - except d's are t's things like that, and just pronounced differently. It's also a fun language to learn cause you talk about the wars, communism, and beer all the time.

Not really, seeing as how Spanish is a romance language and English isn't. German would be the closest to English.

Switching from Italian to Spanish wouldn't help that greatly, seeing as how they're closely related. The biggest boost you'd get is the likelihood of actually hearing Spanish regularly. The best way to learn a language is through immersion, so an hour every other day in a classroom isn't going to do it.

Italian and Spanish are the easiest. Although if you suck at verbal comprehension like me, you'd do well to choose Latin.

Isn't latin just a lot of useless memorization? At least with any spoken language you are given opportunities to express vocabulary and stuff and ingrain it into your head.

I've studied latin (2 years in highschool), italian (1 year in hs), french (2 years in hs), and spanish (4 semesters in college).

spanish is probably the easiest in terms of speaking, but latin is pretty simple if you've got a good head for memorization. it's spoken, but it's not necessarily as complicated as some modern languages and provides a good base for learning any of the romantic languages.
