dvd to avi conversion question

i know how to do a whole movie, etc, but how would you copy individual episodes (like of a show) to seperate files?

Specifically trying to copy seperate episodes of Firefly (show the movie serenity was based on) to avi's

When you rip (using something like DVD Decrypter) I think you can select what part you rip.
Just need to rip the specific episodes to seperate files I believe, rather than ripping the whole disk at once.
