I had a ton of home movies of my kids on VHS tapes - had Costco convert them to DVD's.

What is the best way to 'rip' the DVD to hard drive, and still keep the menu's intact?

Windows 7 system, plenty of hard drive space.
 
Since the DVDs aren't protected, you could use Imgburn to rip the discs to an ISO file or individual folders. Either option will keep the menu structure intact. Some media players may not be able to playback directly from ISO's, though.
