So is it just basically putting your body between the ball and your defender, and backing over him?

I don't know about backing "over him"- you back into him, or you try while dribbling. Actually you can do so without the ball (hold or gain a position).

You don't need to back into him. It's simply getting the ball or establishing a position near the basket against a defender that can by physically dominated for an easy basket. A strong player can post up a weaker one and back him in or a taller player can post up a shorter player and simply shoot over him.
