Duck, Potatoes, and......

I want a nice looking presentation.
I will have duck, which is a reddish brown,
and
Wasabi mashed potatoes, which are bright green.

What vegitable should I add?

I am looking probably for a red or blue vegitable.

damn, how much wasabi are you putting in those potatoes?!?



have long thin stings of carrots and green onion sticking out the top of it


use a couple squirt bottles filled with sauce and do a cross hatch pattern i guess


slaw of jicama and carrots would work. jicama is white, for those who don't know.

Wolfgang Puck's
Wasabi Mashed Potato:

1 cup spinach leaves
1 cup watercress leaves
2 pounds baking potatoes, like russets, peeled and quartered
1 cup heavy cream, heated
4 ounces butter, cut into pieces
1 tablespoon wasabi paste
Salt and freshly ground black pepper

In a blender or food processor, process the spinach and watercress to a fine puree. Pass through a tamis or stainer. Reserve.

Cook the potatoes in salted, boiling water until done. Pass through a ricer. Whisk in hot heavy cream and butter, 1 small piece at a time. Just before serving, stir in wasabi paste and puree of spinach and watercress. Stir until well incorporated. Season, to taste, with salt and pepper.

Roasted peppers (red, yellow, green) sauted with squash (yellow, green), and you could throw a couple half-cut cherry tomatoes in there if you really want to. Season with salt, pepper, and thyme. Yummy. (cooked in olive oil with garlic of course)

I forgot, you could also whip up a couple of those baby squash that still have the flowers on them. If you want to get fancy, you can stuff the flowers, mushroom stuffing always works well.

Thanks glenn I added that to my recipe book :) I've made mashed potatoes many different ways but that should top most of 'em!

The potatoes are actually not hot.
You only add a table spoon.
The spinach and watercress make it green.

The color blue is generally thought to be an appetite suppressant. If you're looking for color to go with your main course, try some fruit like peach halves or red cherries. Both are excellent with duck.
