Dual monitor setup with gaming - how does it work?

I do a lot of photoshop/illustrator/indesign work and so I'm adding a second monitor. I also like to game. How exactly does this work to have 2 monitors while gaming? Will I play on one monitor only? I have a 7800gt vidcard that I was going to use to power the 2 20" lcd's running at 1900X1200. Thanks for any help.

I'm a bit confused on the 1900x1200 part, but one monitor at a time when gaming is the norm. I get 3200x1200 from my dual 20" setup.

I turn on a profile for single display and turn the other one off when I'm gaming.

Most games display only on the "default" video monitor. The second monitor usually adopts some crazy colors and becomes inoperative.

A few games will support dual monitors.

The only game I've ever played on my dual monitor setup is UT2k4. You can adjust the resolution to span across both monitors. Each of my monitors ran at 1280x1024, so I set UT2k4 to display at 2560x1024. Works great for me. However, you'll have the black bezel in the middle of your screen, but you'll get used to it pretty quickly, and it makes aiming easier (giant corsshair, almost).
