I have been trying to learn this and it is kicking my butt

OK, here's how this works:

xorg.conf abstracts various parts of configuring the display process, to allow complicated setups if needed.

A ServerLayout section acts like a display profile. You will need to modify that section.

A Screen section represents a viewable area. You will need to make a second one for the second desktop area. You can copy your current one and make a few changes.

A Device represents the framebuffer and the operations performable by a given piece of hardware. You will need a second one of these as well. Again, you can copy your existing one and make a few changes.

A Monitor represents an actual display. Again, you need a second one, but you can copy your existing one and make the necessary change.

Now, read the xorg.conf(5) man page, specifically the mentioned sections. You should notice that these sections I have mentioned fit together hierarchically.

For starters, you may want to start over again from scratch. There are too many identical entries in the config you posted (Section "Device" 4 times, Section "Screen" 4 times, etc).

You will need two separate Section "Device" entries, one for each display (example: Identifier "Nvidia0", Identifier "Nvidia1"). Each "Device" will have different screens (0, 1) but same BusID and driver.

I haven't done that before, so don't know for sure. I would suggest, however, that you attempt this first since it is easier overall. Afterwards, desktop-spanning shouldn't be so difficult.

To rename a file:

mv <file> <newfile>
mv /path/to/<file> /path/to/<newfile>

mv xorg.conf xorg.conf.original
or
mv /etc/X11/xorg.conf /etc/X11/xorg.conf.original

Ok, looked into desktop spanning some. You will need to use the non-free nvidia driver (you are using the free nv driver now) with Xinerama enabled. You can get the latest non-free driver from Nvidia (or possibly via apt-get). After installing the nvidia driver, you will have to edit xorg.conf to use the nvidia driver instead of nv (replace all instances of nv with nvidia) and add Load "glx" to Section "Module".

To enable Xinerama, add the following to xorg.conf:
