dual channel matched pairs vs 2 x single dimm

I've always bought my ram in matched pairs since dual channel memory became an option.
But I see ads at FRYs for a single 1M dimm at 4-4-4 timings for less than half of the price of a matched pair of 2x 1M at unknown timings. Could you just buy two single packaged 1M dimms and get dual channel performance or is there something else that the maker does with the matched pairs?

 
Matched pairs are basically sticks with identical timings and speeds in one box. Yes, two single DIMMs with identical timings and speeds will run in dual channel.
