Dual Boot of same OS (Win2K Pro)

I've already built a video editing box and am using Windows 2000 Professional. Want to keep the Adobe Premiere OS instance & registry as clean as possible, but may want to use this dual-cpu machine for other things, hence my question. Can I install another instance of Win2K Pro and dual boot from either?

So I need to have two partitions? I guess I have to start over again from scratch since I only have one partition to work from.

My main drive is a Cheetah X15-36LP. Any suggestions as to how to partition it?
 
I'd just cut it in half but your uses may need something else.
I have dual booted Win2K Pro and Win2K Adv. Server, no problem.
