anyone have a good mb recommendation?

This even worth the effort? I've got an extra 2500+ laying around and using 1 in a system already
 
Unless these are Athlon MP, you can't dualize them.

If they are, Tyan's Tiger MPX or Thunder MPX are the prime choices. But true, at the cost of those boards plus the registered ECC DIMMs they require, you'll easily build an Athlon64 system that runs circles around dual Bartons even with just one CPU.
