Drive contents swap, will this work?

I'd like to try WinXP on my laptop that is currently running Win2000 Pro. If I get a hard drive adapter can I transfer everything from the mobile drive, including Win2000 to my desktop so that if I try XP and don't like it I can simply reload everything to the mobile drive and be back where I was? It would take quite a bit of work to get my current configuration back from scratch. I just want to make sure that I can copy ALL of the files, obviously I have "show all files" selected in explorer.

Will this work? Has anyone done similar? Advice appreciated.
