Don't understand why my roommate...

It's common sense that eggs spoil quite easily when left at warm temperatures so I don't understand why my roommate just leaves the eggs he buys on the kitchen table. It's no biggie cause I use them too so I don't mind putting them in the fridge. Just that I don't understand why he feels it's better to leave them outside. Hasn't he heard you can get pretty sick from eating bad eggs.

If he's making scrambled eggs, they come out bigger and fluffier if beaten at room temp.

I'm pretty sure eggs will keep for several days at room temperature. So if he isn't using them fast enough, they could be a hazard to his health.

Maybe he's saving them so they get rotten and he can throw them at people he doesn't like. He's just being nice and not saying anything about you constantly foiling his plans.

where was your roommate raised?

when i was in kenya we ate eggs that came straight from the chicken house and were never refrigerated

Yeah, but they are secretly plotting how to refridgerate them when the eggs are not expescting it. Except they always takes so long that someone else comes in and puts the egs in the fridge themselves.

Alot of "cooks" will tell you that eggs are best used at room temperature.

I've seen this alot in baking.

Although I would keep them in the fridge and move them to the counter only before I'm going to use them.

One of my flatmates used to do that, he'd eat about 12 eggs a day but buy them in bulk. At times some of the eggs would be left in his room for 2weeks. He survived though...

I can understand taking them out and letting them sit before using them but my roommate just leaves it out. If I don't put them away, they could be sitting outside until they're all used, which sometimes last 2 or 3 weeks. Yuck!

Seems like common sense to me. I wouldn't eat some egg that's been laying in the yard for five hours and then fondled by a less-than-sanitary four year old. Gross.
