Most big grocery stores that have a decent ethnic section will have everything you need for sushi (minus the fish). Dried seaweed, sushi rice, sushi vinegar, wasabi paste, etc. I've made it a few times before and it turns out pretty decent. For the fish I usually stick with smoked salmon or tuna, but only because that's the easiest to find where I am, and most of my friends aren't sushi eaters so that's as daring as they'll get.
EDIT: Don't rush the rice! Follow the directions for cooling and seasoning the sushi rice perfectly, as the rice is what makes or breaks the sushi (as long as you didn't get jacked up fish).
