If you can account for the extra heat and power requirements, then it shouldn't really be any worse than the weaker card.
FYI, you can run the cards at different clockspeeds in SLI. Unfortunately, AFAIK there aren't any OC'ing utilities available that allow you to set speeds independently. You can mix stock cards with OC'ed versions(i.e. the OC'ed BFG cards) and they will retain their speeds in SLI.
If you really wanted to, you could probably use Nibitor to mod the BIOS images for the individual cards and re-flash them to default to whatever OC'ed speeds you validated them at. Probably not worth the hassle, though.
